In the final stages, disgorging is done by hand reflecting the craft and skill involved in creating this fine wine.

Every bottle contains the story of chances taken, dreams pursued and hardwork.
We salute our grand-parents and great-grandparents on both sides, men and women from a different era and different times who took a gamble on establishing a new life in a country many thousands of miles across the seas.

Preservative-free wines, fortifieds, liqueurs all made here on the Hill.
NO egg, fish or milk products used in the process, no sulphites.
FY Interest: egg white, milk products and fish bladders (Isinglass) have been used over the ages to flock or filter wines. We don’t use these, instead use blocks of filter paper much like blotting paper.
