Winter might have reminded us of his icy fingers in recent mornings but the days that follow are just glorious.  We hope all visitors to this splendid region are enjoying our amazing sun-filled winter days.  Macadamia trees are coming into flower so keep a lookout for the racemes of creamy flowers and the perfume is heady!

FRITELLE are great little weekender fare….use up leftover veggies, throw in a little finely sliced bacon or ham if you wish and put together a salad with those gorgeous tomatoes sitting on the bench.

Farmers in the BUNDABERG-CHILDERS AREA are the biggest suppliers of sweet potato in the nation.  

Though called SWEET POTATOES they are not in fact in the Potato or Deadly Nightshade family but are indeed yams, high in fibre and extremely versatile. Here on the Hill we love them  roasted in the company of red capsicum, eggplant (aubergine) and any root vegetables such as turnip or parsnip.  A dash of EVOO to get them going is all that’s needed and you can dress them up in any way your imagination leads you.  Smoky paprika, chilli flakes and good old S and P are reliable fall-backs.  buona cucina…….. buon appetito!
