All our wines, sparkling, fortifieds and liqueurs are made right here on the Hill, using traditional methods and no preservatives such as Sulphur Dioxide.
We don’t use milk, egg or fish products in the filtering stage. Instead we use blocks of filter paper, all it le like the old fashioned blotting paper used with dip pen and ink.
