BAKED WHOLE RICCOTTA….. delicious, easy to make, subtly flavoursome with pastes or savoury  with de-constructed olives, sun-dried tomatoes, roasted capsicum.  Don’t forget the cracked pepper and some fresh thyme .  squisito!  

How to do it?   Simply drain, invert onto  a PYREX PIE DISH  and bake as you would a cake, 180C for as long as it needs to get that lovely crust.  buon appetito tutti!
