Flick the oven on and pan roast some bejewelled capsicum and eggplant. They are happy cooking companions as the moisture from the peppers stops the fingers of eggplant drying out too much.

It’s citrus season so keep an eye out for stunning mandarins and oranges from the Gayndah-Mundubbera region, just a short drive form Childers. Eaten fresh just as they are is the best of course, but there is a smorgasbord of recipes from savoury right through to sweetening these colourful, nutritious, flavourpacked gems .
