The intention might be to spend just an hour, do a little tidying up, pick up that pile of prunings, rake up that patch of fallen leaves and before you know it you’ve spent a full day in the garden! Gardeners amongst you will know what I’m talking about. That touch of Autumn in the air means the sting of the heat of summer is gone.
After 3 months of virtually no rain, we were blessed with some decent downpours last week. Yes, the weeds have shot off like sprinters from starting blocks, but the compensation is the beautiful lush green growth everywhere in the garden.
Terranzo the winemaker is equally proud of his Irish heritage as he is of his Sicilian! That’s one reason, twenty years ago, we named our THREE RIGHT HANDS FORTIFIED RED formerly PORT (the name PORT has been taken from use unless of course it is made in OPORTO -PORTUGAL) taking the idea from the BYRNE FAMILY CREST.
The Little Cellar Rat is just as proud of her Irish heritage with grandparents from County Waterford and country Armagh.
HAPPY SAINT PATRICK’S DAY TO US ALL!!
The Italians have hit onto something with LIMONCELLO, the delicious and refreshing lemon liqueur that leads a double life… as both an aperitivó and a digestivó. Ours here at HILL OF PROMISE – LEMONCELLO – is 20% alcohol compared with the high octane Italian variety at 40%.
We’ve just realised the latest batch after having sold out a fortnight ago.
It’s delicious just as it is, over ice!
Recipe as promised:
You need-
2 Lemons (zest of 2, juice of 2)
60 g soft unsalted butter
1 cup caster sugar
3 eggs (separated)
3 tablespoons GF SR flour
1 and 1/2 cups milk
You do-
Get your baking pan for the bath of hot water ready, oven 180 C + buttered pie dish approx 20cm X 27 cm.
Cream butter, sugar, egg yolks, zest.
Add flour, milk, lemon juice and mix. (Don’t worry about any curdling.)
Beat whites with a pinch of salt until fluffy and gently fold through creamed mixture.
Pour into pie dish, which goes into baking tray. Use a jug to put boiling or very hot water into baking tra, allowing to come half-way up the sides of the pie dish and place in oven.
Bake approx 50-60 mins and check at the 45 min mark.
Serve just warm or cooled to room temp with a little pouring cream and even a spoon of lemon curd. Lime works just as well or 50/50 lime/lemon.

When you call into the Cellar Door this week, don’t forget to take some fresh rosemary from the Winery Herb patch. It’s such an aromatic, versatile herb. goes remarkably with beef or lamb and just the ticket for that tray of mixed roast veggies. the Little Cellar Rat is chuffed with how her herb patch is coming along.
